1. PROPERLY DRY BEFORE CURING

A proper drying process is essential during the cure and often times overdrying or too much humidity can ruin an otherwise perfect curing process.

We suggest 10 - 12% internal humidity levels for your contents before starting the cure process

2. ALLOW FOR FRESH AIR EXCHANGE BY BURPING YOUR CONTAINER

Don’t allow too much CO2 to build up inside the container which can ruin the quality.

A fresh air exchange 1-2 times per day initially is a great starting point which is done by recycling new air into the container and allowing the current O2 and CO2 to cycle out.

This first week require more burps and air exchanges and less are required as the cure moves into week 2 and beyond.

The goal is to make sure ideal humidity range is set (55% to 62%) and contents are in an airtight or close to airtight container. Humidity packs are optional during the storing phase

1. Do not let your contents dry out Before and during the cure it’s important to track temperature, RH levels and oxygen exchange to ensure contents do not dry


2. Avoid Mold Build Up - Too much humidity and moisture inside the container can allow the build up and growth of mold.


It's important to monitor the humidity levels especially during the storage phase where the ideal range is 55% to 62% Relative Humidity.

You can use a hygrometer to keep track of the humidity levels inside your containers.
